DEFINITION |
Natural liquid that is a by-product of the salt making process consisting of minerals in the salt brine that do not become part of the salt crystals. Consists mainly of magnesium chloride (nigari) and up to 60 other trace minerals. Nigari (derived from the Japanese word for "bitter") is an important coagulant used in the preparation of tofu from soy milk. Clear slightly yellowish liquid, odorless. Water-soluble. |

USAGE |
It can be used added as is. Typical use level is 0.2 - 1%. Use in formulations that contain salt tolerant thickeners as minerals can destabilize certain polymer thickeners. Thickeners like hydroxypropyl guar & xanthan gum, hydroxypropyl methylcellulos are preferred. |
